Thai food just asks to be sampled and shared so it’s no surprise that Koh Thai Tapas has gone down a storm since it opened in Bournemouth in 2010. The name translated means ‘island’ but it’s now building a whole archipelago of stylish restaurants across the south. Good news for everyone, like us, who wants to experience authentic Thai food, while sipping some tasty cocktails…
“This is our vintage inspired tipple” says Koh Tai’s Sophie Cox. “Made with local Pothecary Gin, it forms part of our After Dinner cocktail list of sumptuous dessert alternatives to round off a fabulous meal..”

Recipe
A vintage inspired tipple made with Pothecary gin and elderflower liqueur.

Ingredients
25ml Pothecary gin
20ml St-Germain
20ml lemon juice
40ml apple juice
20ml sugar syrup
10ml egg white
40ml green & mint tea

Method
Shake all in Boston shaker very hard for 20 seconds. Double strain into vessel.

Garnish
Float a mint leaf on top.

Chin Chin!
